- 1 large egg

- 1 cup (200g) cottage cheese or farmer's cheese

Instructions
Step 1: Make the Dough
- In a large bowl, combine the flour and salt.
- Add the egg and mix until crumbly.
- Gradually add water and oil, mixing until the dough comes together.

- Cover with a damp towel and let rest for 30 minutes.
Step 2: Prepare the Filling
- In a mixing bowl, combine mashed potatoes, cheese, sautéed onions (if using), salt, and pepper.

Step 3: Roll Out and Fill the Pierogi
- Roll out the dough on a floured surface to about 1/8 inch (3mm) thick.
- Use a round cutter (about 3 inches/8cm in diameter) to cut out circles.
- Place a small spoonful of filling in the center of each circle.
- Fold the dough over the filling to form a half-moon shape. Pinch the edges tightly to seal.
Step 4: Cook the Pierogi
- Bring a large pot of salted water to a boil.
- Gently add pierogi in batches, stirring to prevent sticking.
- Cook until they float to the surface, then simmer for 2-3 minutes.
- Remove with a slotted spoon and place on a plate.
Step 5: Optional: Fry the Pierogi
- Heat butter or oil in a frying pan over medium heat.
- Fry boiled pierogi until golden and crispy on both sides.
